Among legumes, there are unbeatable varieties in the province, such as the Alubia de la Bañeza (Bean from La Bañeza) or the Lenteja Pardina de Tierra de Campos (The “Pardina” Lentil from Tierra de Campos). The tradition of the beans from La Bañeza dates back to 1570, a time from which transaction documents in Medina del Campo (Valladolid) are still preserved. This bean is greatly admired in the area.

The Lenteja Pardina, on the other hand, can take pride in being the main ingredient in the dishes from the Esla-Campos and Sahagún areas, this legume having the Protected Geographical Indication. It is characterized by its smooth and slightly floury texture, with a smooth and soft flavor.
